When my son’s birthday rolled around, I asked him what he wanted for cake. I feared he’d ask for an American cookie cake since it’s become his annual tradition, but secretly I was wishing for the standard cake response. After all, the Toll Holl famous chocolate cookie cake isn’t in the UK and Simmons sells a mean rainbow cake.
But I knew I wasn’t going to get away with Simmons for both kids’ birthdays this year. So I wasn’t surprised when he asked for cookie cake and whoopie pies, with cookie cake being #1.
So after doing a little research and tweaking, making an American cookie cake in the UK isn’t that hard after all.
If you are looking for an American treat to make your child’s birthday a little bit different (or to impress a British friend), here’s an easy cookie cake recipe converted for expats in the UK.
